The farm primarily cultivates the Catway variety, along with other premium varieties such as Geisha. Thanks to the use of cutting-edge technology and a commitment to quality, Don Mayo has achieved remarkable success in international competitions, winning first place twice. This crop is processed using the dry method, where the coffee beans are fermented in sealed tanks for 36 hours after washing, then slowly dried to achieve deep, complex notes that reflect the coffee's unique character.
